I went to the Farmers Market today and got a bunch of baby bok choy and some scallions and decided to make a delicious chicken and baby bok choy soup for dinner! I know how you like me to include the recioe so here it is! *I usually combine 3-4 recioes and come up with my own. Vicki Wagner Baby Bok Choy and Chicken Soup Recipe 1-2 tablespoons dark sesame oil* (must have.) 1 tablespoon chopped peeled fresh ginger 1 carton of chicken broth 3 cups water 2-3 tablespoons low-sodium soy sauce 3 cups coarsely chopped baby bok choy 2-4 tablespoons sliced green onions (or more.) 2 tablespoons chopped fresh cilantro 3-4 cloves of garlic, sliced up a bunch of celery leaves 2 stalks celery, cut up 2 bone in chicken breasts lemon or lime juice. 5 mushrooms- sliced up 1 tablespoon of chicken bouillon. Combine chicken broth, bone in chicken breasts and 3 cups of water, the celery leaves and stalks from the top of the celery and bring to a boil then reduce to a simmer, cover and cook for 35 minutes. Scoop out the celery leaves and any thin stalks. Remove the chicken (make sure it’s done. Let the chicken breasts cool and then remove the skin and chop them up.) Then add sliced celery, scallion whites, garlic, ginger and mushrooms and bring to a boil. Reduce to medium-low and cook for about 10 minutes. Add the bok choy and simmer until just tender, about 5-7 minutes. Add the chicken back in. Add some more soy sauce, chicken bouillon lemon juice and salt to taste. Add the green scallions and serve!
