ICE WINE AGAIN! I just couldnt stop myself! Im tired of it, but I went out and picked another 100 lbs of crab apples to get our Apple Ice Wine production up to 50 gallons. This last harvest should do it. I felt like a giant overweight sage hen this afternoon when I stepped off the top of our 12-foot orchard ladder and climbed up a bit higher in the tree where there was a natural perch to sit upon while picking apples from the top of the tree. It provided a lovely view and a bit of mild swaying in the branches as I leaned in all directions to gather the apples. Tomorrow well press the last frozen batch picked today, cryo-concentrate the weaker juice over the next two days and be ready to start fermenting by Friday. Ive submitted our label for federal approval, and if all goes well, it will look pretty much exactly as shown below. And then the long wait until everything is fermented, clarified, stabilized and bottle-aged. Aah, Im salivating just thinking about opening that first bottle!
