What will I be doing? As Director of Food & Beverage, you will oversee the strategy, management, operations and team development of the Food & Beverage and Banquet departments to maximise profitability and quality. Specifically, you will be responsible for performing the following tasks to the highest standards: F&B strategy and management: Contribute to the strategy and planning activities of the sales function Develop the Hotel Sales & Marketing Plan which accurately interprets the objectives of the business and uses the plan as a communication tool and to focus the teams and own efforts Contribute to the development of regional sales and marketing initiatives recommending, implementing and monitoring appropriate local activity Identify, locate and secure the people and financial resources needed to achieve the sales results required Operational Profit Margins: Take all steps to maximise profitability and to ensure that the F&B profit budget is achieved. Conduct profit driven F&B audits and field visits; must ascertain a clear agenda with the General Manager of the hotel prior to visit. Review F&B forecasts and budgets as well as food and beverage pricing and approve any changes Analyse and monitor data to aid decision-making in the following areas: Operational and financial review F&B profit F&B sales F&B costs F&B financial reports: Monthly, Quarterly and YTD P&L outlet profitability Quarterly F&B Key Performance Indicators Quarterly food cost and beverage cost Ensure that costs are controlled and in line with business levels Monitor and analyse (tracking productivity and against benchmarks) of the labour cost according to business levels, activity, and/or season Ensure, in conjunction with EPO, that hotels comply with procurement agreements Check operating equipment inventories and make recommendations where necessary Quality, Service Levels & Brand Standards: Instil brand awareness and compliance, based on SALT/QA reports, with critical focus on the bottom third Ensure the highest standards are being delivered so that the brand values and standards are never compromised Review compliance of all F&B programmes, including Hilton Breakfast, Hilton Wine by the Glass Healthy Options, Hilton Classics Hilton Buffet, VIP set-up and Coffee break guidelines, etc. Follows up, actively, on QA and mystery shopper reports, underline shortcomings for the hotels and implement action plans. Conduct quality driven F&B audits and field visits People: Maintain contact with DOs, Executive Chefs, F&B Service Managers in the area Reinforce personal development programmes within hotels to provide well-trained employees and co-ordinate cross exposure training when required Provide input to the F&B succession plan and recommend candidates for promotion and transfers Food & Beverage Operations: Evaluate new F&B trends and competitors product offering Collect, analyse and follow up on departmental marketing plans within the region Research and compile F&B best practices and maintain a good communication of Best Practices through HiWay F&B Other: Issue a concise report of findings and accomplishments following hotel visits, complete with conclusion, recommendations and supported by facts Support key projects through data analysis, review key operational issues within hotels and build financial models to assist decision-making Help to establish the F&B department in new hotels and work closely with owners, project managers and consultants to define F&B policy Review food and beverage advertising and promotional material for internal and external use Review menus and drink lists including merchandising Co-ordinate with other hotels, if required, special events, festivals and joint promotions What are we looking for? Operationally hands-on. Heavy schedule of travelling. Need for resilience.
