Id like to share an experience, Heather Tower, if this is inappropriate, please delete........... Ive been on the Maine, New Hampshire border for 13 years. Ive had pigs for meat all those years. Ive always used a butcher up in Lyman, but when the old man retired and the business passed over to his son in law, I was no longer happy with the quality of the smoked meats. I tried a butcher in Sanford, and again, the smoked meats were less than I expected. A friend recommended a small place over in Strafford, NH......Clay Phalens Butcher Shop.......... I picked up my fresh meats just before Christmas and was happy to see not only the usual cuts, but hed done a GREAT job on sausage and a few special cuts Id asked for. Yesterday I got a call my smoked meats were ready. We had a ham steak for supper last night and both my man and I were EXTREMELY pleased. This was NOT the dried out version Ive come to expect, but the brining was PERFECT and just the right amount of juicy and smoky!!! This morning we sampled the bacon. PERFECT and just the slightest hint of smoke and salt!!! I could not be more pleased!!! Not only do we have GREAT smoked meats, but a selection of slim jims and a yummy sample of his own sausage blend as well!!! Apparently Clay Phalen does all manner of wild game as well as any of the larger farm animals!! If you grow your own meats, Id highly recommend that you take at least ONE there to have it butchered and try it out.......Im POSITIVE that you will not be disappointed with the price OR with the quality of what you receive back!! HONEST, FRIENDLY, NOT swearing constantly, and SOCIABLE....... AND the GREATEST job on MY smoked meats that Ive had in the 13 years since the old Portuguese butchers of New Bedford........ WELL worth the trip over to Crown Point Road in Strafford, NH.
