If anyone wants to try this, it is a good eat. Apple Skillet Cake 1 Tbl. butter; 3 apples, peeled and sliced; 2 Tbl. light brown sugar; 1/2 teas. cinnamon; 1/2 cup raisins; 3/4 cup flour; 1/3 cup sugar; 1/8 teas. salt; 1 1/2 cup milk; 2 eggs+1 egg white; 2 teas. vanilla. In a 10" skillet that can also be placed in the oven, melt the butter and brown the apples for 3 minutes. Add the brown sugar, cinnamon and raisins...cook for 5 minutes until tender, turning often with a spatula. In a medium bowl, combine flour, sugar and salt. In a larger bowl, whisk together milk, eggs, egg white and vanilla and combine with the other ingredients, mixing until smooth. Pour the mixture over the apples and bake in a pre-heated oven for 40-45 minutes at 375 degrees F. It was quite tasty with vanilla ice cream and made the house smell like Christmas!
