If your after a cauliflower pizza base that you can eat with your hands then this is the business!! Gluten free, grain free, nut free, dairy free and delicious! 2c riced cauliflower 2 eggs 1/2c buckwheat flour 1 Tblspn chia seeds 2 Tblspns chopped parsley Sea salt Cracked pepper Paprika Tumeric powder In a frypan over medium heat add a little coconut oil and fry riced cauliflower. Season with sea salt, cracked pepper, paprika and powdered tumeric. Cook for approx 5 mins, moving around the whole time or until cauliflower cooked. Transfer to a bowl and let cool slightly. Add the 2 eggs and chia seeds and whisk with a fork until well combined. Let sit for 10mins so chia seeds can soften and thicken. Stir in buckwheat flour and parsley and mix well. Line a baking tray and grease with coconut oil. Spoon half the mixture into the tray and spread out evenly with a spoon to desired thickness (mine are around 2-3mm thick). Pop in the oven and bake at 180 degrees for 10mins, flip and bake 5 mins other side. Remove from oven and top with your fav pizza toppings before returning to the oven to heat toppings (approx 10mins). Slice and serve. Makes 2 medium sized bases. I have topped mine with tomato paste, sauteed leek & mushrooms, grated sweet potato & carrot pre fried in a little coconut oil, poached chicken shredded, cheese & added fresh avocado after it was cooked.
