If youre looking for something easy, convenient, tasty, and healthy - this is something I have been doing over the past year and it makes life during the week much easier. I put three large boneless and skinless chicken breasts in a crockpot with: one cup of apple cider vinegar, two cups of water, one tablespoon of onion powder, one tablespoon of minced garlic, and one tablespoon of Webers Kickin Chicken seasoning. Cook on low for 6 hours, then shred the chicken and place in snack size ziplock bags to freeze. During the week I will take a baggie of chicken in my lunch and the possibilities are endless. My favorite is to mix with a cup of frozen oriental style vegetables and microwave for a couple minutes. Then cover with your favorite sauce like La Choy stir fry or teriyaki sauce. The spices in the chicken are versatile enough to use in a chicken BBQ sandwich or a chicken quesadilla. If I know Im going to do BBQ exclusively I will use Webers Sweet and Tangy in place of the kickin chicken. The possibilities are endless when it comes to vegetable and sauce combos. Just watch the sodium and sugar content of the sauces. Quite often you can put together an amazing lunch under 250 calories and a huge serving of protein.
