If youve worked in restaurants for any significant amount of time, youve probably noticed that there are significant cultural differences between kitchen people who attended culinary school and those who have not. Cooks who went to culinary school are organized, thorough, respectful of authority, and have a wide and fundamental knowledge of culinary technique. OR theyre pedantic martinets in stupid hats even French chefs dont wear any more who spend more time kissing the bosss ass than busting out tickets. Cooks who started out in the restaurant industry washing dishes at the age of 15 are battle-hardened and practical, great improvisers who can handle a near-impossible workload with hungover panache. OR theyre a bunch of illiterate thugs with shitty jailhouse tattoos who drink too much and wouldnt know how to make a real white sauce with a gun pointed at their PBR-addled heads. Either way, they all think smoke breaks should be in the Constitution.
