Ikan Terubok with Sunquick Mandarin (by Chef Jaafar Onn)- Episode 8 ANNIE LIM (Sarawak) TEROBOK ROE WITH SUNQUICK MANDARIN 1-2 or 2-4 large pieces of fresh terobok roe or shad fisk eggs 2 table spoon Sunquick Mandarin 2 table spoon water Butter, salt and pepper to taste Fried oil (that has been used for frying fish ) METHOD Sprinkle a fish-dish ( stainless steel ) with salt. Lay the cleaned, wiped terubok roe on the salt in a single layer & sprinkle on more salt on roe. Dot with butter, sprinkle with pepper, of pour over the Sunquick Mandarin mixed with the water. Add 2-3 table spoon of fried fish oil, enough to cover the base bottom of the inside base of the fish-dish. Bake for about 45 minutes to 1 hour in a moderate oven at 190 c, basting with Sunquick Mandarin & melted butter, until fragrant & cooked. Serve hot with a salad, on lettuce leave. NOTE IF the Chef cannot find enough ikan Terubok to supply all the roes, a version can be cooked by using Sunquick basting sauce on whole ikan terubok or even some other fish ( whole )
