Im a bit new to smoking meats, not that I havent done it here and there much of my life, but now exploring how to do it consistently. I recently bought a Traeger. (ok boo, boo, hiss ,hiss, cheater, cheater.... now that we got that out of the way... :) ) My main goal is to make consistent great smoked food, if Im a cheater for using a pellet grill so be it, butt it works! Last weekend I smoked about a 8lb butt. I put it on the smoker around noon (wasnt planning on it for dinner. Just wanted to have it finished by 10pm so It would be ready for lunch the next day. I found I hit the dreaded stall around 7pm it didnt finish till almost 4 in the morning.... Since than I learned a bit about the stall and how to control it. It seems once you stall if you wrap it in foil it will sail right out of the stall and continue to cook, but, the bark becomes softer..... Sooooo, I can hear the jeers already... :) Being a single guy and a somewhat lazy cooker.... I have a Nu Wave oven.... Its great! I can cook a frozen, yes frozen 7lb turkey breast in a bit over 2 hours,,,, So next butt I do I plan on trying this out, Smoke till It hits the stall than Nu Wave it until it hits the temp mark. I think this will work. The Nu Wave cooks quite a bit faster than on the grill or in a regular oven. Im hoping with this method, I may be able to get the butt done in about 6 hours and have a nice bark.... Next weekend Ill give a shot. One more thing for you pelletizers I plan on getting an induction hotplate to add to my Traeger. These are electric and it will act like a side burner for me... It will be nice to have on the grill a place to sear steaks.. etc Nu Wave makes a nice one (PIC) for about $150 you get 2 burners and a bunch of pans etc. Im surprised that the pellet grill manufacturers havent added this to their grills.. If anyone has already tried this please share your experience. The same if you have a method for foiling that doesnt affect the bark to much. Thanks!
