Im currently going through a phase of cooking old favourites from my childhood. ...more comfort food and memories of mum busy in the kitchen. This cake is made with semolina which gives a grainy texture to the cake and it is drenched in a light orange syrup. Its lovely served as is or you could serve it with a dollop if thick luscious cream. REVANI - SEMOLINA CAKE with ORANGE SYRUP For the cake * 1 cup plain flour * 1 cup fine Semolina * 3tsp Baking Powder * 1/2 cup Unsalted Butter * 1 cup Caster Sugar * 3 Eggs - separated * 1/2 tsp vanilla paste * Zest of 1 Orange * 1 cup Milk * pinch of Salt For the syrup * 1 1/2 cups sugar * 1 1/2 cups water * 5 strips of Orange peel * 1tsp lemon juice Grease bottom and sides of cake pan. Mix together the flour, semolina and baking powder. In a separate bowl cream sugar, butter, zest and vanilla paste until pale and creamy. Add egg yolks and continue mixing until well combined. Add flour mixture 1/3 at a time alternating with the milk. Clean beaters well and beat egg whites in a separate bowl with the pinch of salt until soft peaks form. Using a spatula fold the egg whites into the cake mixture very very gently until just blended. Do not over-mix otherwise the egg whites will flatten. Pour cake mixture into prepared cake pan and even top. Place in moderately hot oven for bake for 45 mins and cake is golden. Check with a a cake tester - it should come out clean. While cake is baking make the syrup. Add water, sugar and orange peel into a saucepan and bring to the boil. Simmer 5 mins. Add lemon juice and cool. While cake is warm gently pour over syrup. Cut cake when cold. If you like, finely shred the orange peel used for the syrup to decorate each slice of cake. OMG soooo good!! ENJOY !
