Im learning to cook more, and although its a bit intimidating in the beginning, I am making dinner more and more (and surprisingly doing a good job!) Tonight I made Apple-Dijon Chicken. 4 skinless, boneless chicken breast halves 1/2 teaspoon salt 1/8 teaspoon freshly ground black pepper 1 tablespoon olive oil (I substituted this with coconut oil) 2 golden delicious apples, each cored and cut crosswise into 6 rings 1 small red onion, sliced 3/4 cup reduced-sodium chicken broth 2 tablespoons maple syrup 1 tablespoon dijon mustard 1/3 cup half and half milk 1 teaspoon cornstarch
