Im making cassateddi/ casatelli/turnovers/empanadas. They are called by many names. I had leftover rabbit from the other day. I took the meat off the bones and mixed in a 1/4 cup of Beekman bourbon BBQ sauce. I grated a cup of caciocavallo cheese on the large holes of a box grater as my filling. I made the dough by hand. You can use a food processor. 2 1/4 cups flour 1 1/2 teaspoons salt 1/2 cup very cold butter /cut into small dice 1 large egg 1/3 cup ice water 1 tablespoon white vinegar Place flour and salt in the bowl of a processor . Pulse to mix. Add butter and pulse until it resembles cornmeal. Add egg, water and vinegar mixed in a cup through the feed tube . Pulse until the dough comes together into a ball. Remove and shape into a log. Wrap in plastic wrap and refrigerate for 20 minutes. Cut the dough into 12 equal slices. Flour a ziplock bag that youve cut open like a book and roll each round into a disc about 6 inches round. I fill as I roll them. You may roll all of them and stack them with plastic in between each one and refrigerate. Put s heaping tablespoon of meat and a generous pinch of cheese in the center of the dough. Dip your finger in a little water and moisten the edge of the dough. Fold and crimp to close and shape them. Refrigerate 30 minutes and brush them with an egg wash. Bake in a preheated 400 degrees oven for 20-25 minutes or until golden. I had filling for eight. Ill freeze the rest. You may use your favorite filling. Broccoli rabe and sausage would be delicious. Great way to use leftovers.
