Im not one to bake often ... When I do its this APPLE PIE! Start with farm fresh apples, mix em up ... use a variety. While youre paring the apples, boil a pot of water. Cut the apples straight-away from the core (sounds wasteful; nibble around the core)! CHUNK ... Never Slice! Back to the hot water ... pour it over the apples and lemon juice; let them rest in a bowl for 10 minutes (while you make your crust). This pre-softening helps the apples keep their shape. Mom always used 7-UP instead of cold water in her crust. When your crust is ready; drain apples, toss in flour mixture and arrange in the pie plate. I tried baking a peach pie in a paper bag, once ... a disaster ... the bag caught on fire! Peaches are just too, syrupy and oozy. Never had a problem with apples.
