Im off today, its raining so, Im in the kitchen stocking up for my pantry. This video is raw - unplanned. I picked up my camera real quick just to show you what I was up to. I really dont eat a lot of eggs. But, for stocking up, in case of an emergency, this is fast, easy and so inexpensive. The eggs are boiled, the covered with a brine made of vinegar. The eggs can be used to make deviled (angel eggs :), salads and for sandwiches or just to eat straight out the jar. Also I stumbled across another way to preserve garlic, which is of course a MUST in our home. Its called garlic confit. You cover garlic with olive oil and simmer REALLY LOW for an hour. Pour into jars and cover. The garlic can be used for spreads, salads and other dishes. The oil is great for dipping.
