Im often recommending quinoa to my clients as a great way to get healthy carbohydrates into a meal. A lot of people are unsure how to cook it or dislike its fairly bland taste. The best two ways I use are to boil it for 15 minutes with half a stock cube (it ends up a bit like cous cous and the stock cube adds a nice flavour) or pour it into a pan with a tin of chopped tomatoes and anything else you fancy, and simmer for 15 minutes, as in the photo below. This meal has also got a tin of tuna, packet of kidney beans and some chopped veg, creating 2 lunch boxes full of a very filling, nutritious, tasty meal. Total preparation and cook time: 15 minutes
