Im revising our menu for the summer... My goal, besides offering tasty food, is to offer wide selection and quick service. To do this, I broke the menu into three tiers. Specialty Items, Regular and Quick Service. The stuff at the top of the menu is stuff that takes a little longer to make, but not much more than 5 minutes -- middles stuff might require some prep (frying, cutting, etc.) but basically can be served in only 2-3 minutes, then theres a whole bunch of otsumami like potato chips, popcorn, surume (etc.) that can be brought instantly. I really wish our shop had an open kitchen like a regular Izakaya, but when we selected the shop we also had to consider sound proofing -- Most Izakaya type shops have lots of windows, and weak sound proofing, so live music would have been impossible. (Remember: Cooking = need for ample ventilation!) This shop is somewhat unique: It was designed 40 years ago as a karaoke/snack bar, but has a full service food kitchen. Very rare... unfortunately... Its still a challenge. As for the future, in order to open a shop that has a REAL Izakaya counter and stuff like Yakitori or Sashimi, Id need to design the shop from scratch... so if anybody is bored with their money has about Y15,000,000 to lend me, please leave it in an unmarked envelope under the door... I might spend some of it on Pachinko, but the bulk would lead to the creation of the Eddies Lounge Super Izakaya and Yakitoriya. Anyway, our new menu has almost 60 different items to choose from... This is definitely WAY larger than a typical Jazz bar... Hope to have the final menu designed too! --Hope youll come by, enjoy our bands (especially the new SMOKING Thursday/Friday band) and of course try our our nice sake and food menu! Heading to the shop now... I want to test out Pizza Harumaki... Maybe it will work... maybe it wont... well see...
