Im sharing this yummy-sounding Skillet Meatloaf recipe from Community Member Verdia -- this sounds awesome! 1.5 lb ground beef ½ medium yellow onion chopped 2 eggs 1 cup crushed Keebler crackers ½ tsp ground oregano ½ tsp ground basil ½ tsp salt ½ tsp black pepper ½ cup diced cheddar cheese ½ cup ketchup Mix all ingredients lightly and form 6 small loaves. Place in a skillet (I used my electric skillet) over medium heat and let cook for about 12 minutes. Drain juices and flip them over. Set heat to low and allow it cook for about 20 to 22 minutes. I then drain again usually and add ketchup to the tops and keep it on low heat covered for an additional 10 to 12 minutes. Plate it up and serve. I made homemade mashed potatoes and green salad for sides.
