Im so exited to get the pumpkins this week. Im going to cook my orange soup. Yum- my family fav. You take every thing thats orange: Pumpkin, sweet potato and carrots But its also a good way to hide your greens with out the man and little ones knowing they are in there like Spinach, kale, onion (garlic for a less sweet flavor) The amounts are up to you. For a large pot Id say use 1/4 pumpkin 2 large sweet potatoes 1 large onion 1cup spinach/1 cup kale (If want garlic add 3 cloves now) Seasoning: 3/4 tbs cinnamon 1/2 tbs nutmeg (Ginger is optional- Im not a fan, my mom puts lots of ginger) 1/2 tbs salt Sugar is optional. Usually if the pumpkin is sweet their is no need for sugar but if you taste the water and its not sweet add 1-1.4 tbs sugar. In a large pot boil 3/4 pot water. Add carrots first because of their hardness. Then the sweet potatoes The pumpkin. The onion After about 15 min add kale/spinach Add seasonings. Let cook for a mother 10-12 min. When all vegetables are soft place them all in a blender with half the amount of the water from your pot and blend till silky soft. If needed add more water. Can also use a hand blender in the pot itself. Now you have the choice of making it creamy. I like it plain but many people like creamy. If wanted creamy add about 1/2 cup heavy cream.
