Im starting to become a bit concerned about those saying theyll sell to UK only to avoid the VATMOSS issue. I wasnt able to make the meeting yesterday so not clear on investigations/enforcement. But I would strongly suggest still gathering the evidence required for EU sales so that you can prove they are UK if another member state decides they want to look into your activities. In my almost 10 year history working with Citizens Advice I can say that most problems people come in with (including debt, consumer, grievances at work, tax/tax credit/benefit problems) involve them trying to argue against an authority or company but with no or little evidence to fight their corner.
