In February, Paul and I rented bicycles in Jinghong and headed into the countryside. Coming back, he cut down an alley on the edge of town to see if there might be a small cafe. We found a large outdoor cafe, with lots of separate dining pavilions. The hostess took us into the herb kitchen, insisting I smell or taste all the various fresh ingredients that went into a salsa. No tomatoes, onions, garlic or pepper, but it was as hot and spicy as any Mexican salsa. One of those memorable moments in the middle of nowhere.
