In this weeks challenge class - before we did our body shredding workout, we made some Gingerbread Protein Donuts with an optional Dark Chocolate Maple Glaze. Were doing a Fall recipes series right now in class, hence the Gingerbread :) The ingredients were all super healthy and I went over their nutritional benefits while I was baking. Donut Ingredients: 3/4 cup almond meal 1/4 cup/ about 2 scoops natural protein powder (I used Garden of Life Raw - you could use a flavored one too) 1/4 tsp baking soda 1/3 cup unsweetened organic applesauce 3 T honey Pinch of sea salt 3 eggs 3 T coconut oil 2 T organic, unsulphured blackstrap molasses 1/2 tsp cinnamon 1/4 tsp ground cloves 1/4 tsp nutmeg 1/4 tsp ground ginger 1/4 tsp vanilla extract Preheat oven to 350. Blend dry ingredients. Blend wet separately. Mix together. Spoon into a donut pan (I got one on Amazon) and bake for 15 min, or until cooked through. Cool on a rack and glaze if you like. Theyre yummy without the glaze too! Glaze - optional. This will add more sweetness. 1/4 cup dark chocolate pieces (I used 70%) 1 T coconut oil 1 T maple syrup 1 T blackstrap molasses Melt. Dip donuts.
