Indian style B-Fo hash. decided to try a change of pace today and it came out so well I wanted to share it w/ you all!! Carmalized onions & mushroom w/ coconut oil, then added about 1/2 of a med sized buttercup squash (these taste GREAT and you can eat the skin!) that I diced & steamed for 10 mins, 1 clove of garlic. Mix all of that up and add spices to taste. I used 1 t garam masala (This can be a strong flavor, start w/ less then gradually add more as you want) 1 t powdered ginger 1/2 t clove 1/4-1/2 t cinnamon 1/2 t or more of cayenne Salt & Pepper, I added gradually throughout cooking time then finished it at the end. I didnt do it this time, but you could add in some Jones all natural sausage (find it in the freezer section at the chopper, right next to the other frozen sausages) All of the spice measurements are estimates! If you dont like something leave it out, more importantly, be creative and try something new! A breakfast hash is a great thing you can make ahead of time & freeze or just take from for the week! A great way to get some healthy & nutrient dense carbs that re-heats easy, you can eat w/ eggs and that you can take from for the week! Be healthy & eat well!
