Ingredients: 2 ½ cups - Maida (Refined Flour) 1 ½ cups - Castor Sugar 1 tsp - Baking powder 2 tsp - Soda bi-carb ½ tsp - Salt 1 cup - Amul Dahi (Curd) 2 - Eggs ¼ cup - Cocoa Powder 1 cup - Refined Oil 1 ½ tsp - Vanilla Essence 1 cup - Boiling Water 3 cups - Unsalted Butter 3 cups - Icing Sugar Assorted - Food Colours Few - Maraschino Cherries 1 bar - Dark Chocolate 200ml - Whipping Cream Method: 1. Preheat oven to 180*C. Grease a muffin tin. 2. Sift flour, baking powder and soda bicarb. Divide into two portions. 3. Combine sieved cocoa powder with one portion. 4. Beat eggs till fluffy and pale yellow. Add castor sugar and beat some more. Add Amul dahi and refined oil and vanilla essence and beat. 5. Divide into two portions. 6. Fold the white mixture into one and the cocoa mixture into the other. 7. At the end, add half a cup of hot water to each mixture. 8. Spoon into muffin tin and bake for 22 minutes. 9. When done. Remove from oven and cool 10. Remove muffins from tin. 11. Whip cream till stiff peaks form. 12. Whip the unsalted butter with an egg beater for 1 minute. Add icing sugar a little at a time as you continue to beat. 13. Add vanilla essence. 14. Garnish muffins with whipped cream, chocolate ganache, buttercream icing and cherries.
