Ingredients for Italian tomato sauce to be used for pasta or as a base for meat dishes. 3 kilo approx. of over ripe toms (skinned and excess pips removed) Finely chopped carrot Finely chopped celery Finely chopped onion Parsley stalks Basil Garlic Two anchovy fillets Salt and pepper to taste Method Soak the toms on boiling water for five to ten mins and peel Sauté the onion and 1-2 cloves of garlic in olive oil on a gentle heat Add the finely chopped carrot and celery Add the chopped toms, season, add anchovies and parsley stalks Cook gently and reduce down, for around 30-40 mins. Add shredded basil just before use. Top tip: tomatoes must be of good quality and over ripe, but if they lack flavour, add a tsp of sugar at the beginning Enjoy with pasta, good parmesan, and a final drizzle of good olive oil. Pop any left over into jars in the fridge or freezer!
