Mostly laundry actually. Man, who knew that a weeks worth of laundry from 5 people could be so daunting. Yikes!! But I am kind of behind on my cooking and baking as well since Ive been gone and cleaning. Not to mention, I needed an Oreo fix! So here we are. I saw this recipe earlier this week on a blog I kind of stock called Picky Palate. If you dont follow this blog, you should!! Its amazing. Plain and simple! And that is where I found this little concoction. Gorgeous, right!?! I love all the layers. Just makes you wanna take a bite, and really, all you need is a couple ingredients. You just prepare your brownie mix, spread oreos with peanut butter, stack, cover with brownie mix and bake. Easy and so delicious! Enjoy!! Oreo and Peanut Butter Brownie Cakes 1 box brownie mix, 8x8 inch size 24 Oreo Cookies 1/2 cup creamy peanut butter Preheat oven to 350 degrees and line a 12 muffin cup baker with paper liners. Prepare brownie mix according to package directions. For each cupcake cup spread 1 teaspoon of peanut butter over 2 Oreo cookies and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve. For those who want the cookies to get soft and are thinking of using the butter trick, try mixing a little butter (I used country crock, 1 part butter to 2 parts PB) so that when it gets hot, it melts a bit and makes the cookies soft. Works for almost every kind of cookie. The bread will turn hard as a brick. Once, when I was off to college, I got a care package of cookies that were HARD. I thought they were too hard for one slice, so I put two slices of bread in the container. The best liners to use is the silicone reusable liners. Then you can pop them out of the silicone liner, wash them and reuse them. I had to cut the paper off which is a pain. I did exactly everything they said so I dont know why this happened. KKDEHAAN in reply to TaraSchwarzApr 10, 2012. 4:53 AMReply Mine stuck a little, but the ones that that stuck the most and were the hardest to remove from the paper were the ones that were a little overfull and the brownie mix baked over the edges of the liners. Also, they stuck more when not stored in a warm place. On all of mine you had to go very slowly with the papers and work them off carefully because they were ripping when you tried to take them off too quickly. I would also be very careful not to over bake them as I think this can cause them to stick to the papers too. Good luck, hope it helps! I have read some comments that say they cannot get their cookies to soften enough and instead of using butter I found that if I leave them in a warm place (like the microwave) overnight the cookies are quite soft the next day... I also have not made them with regular Oreos but use peanut butter ones and I think that maybe this has helped the cookies soften as well and who doesnt love MORE peanut butter??? :-) lindayat says: Apr 7, 2012. 8:53 AMReply I didnt have enough Oreos so I made some with Girl Scout mint cookies. Also I have a grandkid that doesnt like peanut butter so I just took off one chocolate cookie wafer off one Oreo and stuck the icing side to another Oreo. I crushed up the leftover wafers and sprinkled it over the cookies so we could tell which ones didnt have peanut butter. I havent eaten them yet. I have to wait until tomorrows dinner. But since Im on a calorie restricted diet I made some adjustments that make them a little less calorie dense. I havent tried this version yet so Im not sure how it will turn out but Ive done the No Pudge brownies for years and they taste just as good as normal brownies. Here is a reduced fat/calorie version 1 box No Pudge Brownie Mix 2/3 c plain greek yogurt - fat free 24 reduced fat oreos 1/4 cup chocolate PB2 (Im guesstimating here) 2 tbs water (another guess, may need more to reach the right consistency) 2 packets truvia sweetner 3 tsp cocoa Mix brownie and yogurt together to make brownie batter. Mix PB2, sweetner, cocoa, and water together to make a chocolate peanut butter spread. Prepare like the original recipe but use the No Pudge box as your baking guideline. This knocks the recipe down to 220 calories a brownie and thats with the double cookie inside.
