Instructor Catie has done it again with this Grilled Heirloom Tomato and Pesto Pizza! Your favorite pizza dough extra-virgin olive oil prepared basil pesto (or make your own, super easy!) mixed heirloom or other seasonal tomatoes, very thinly sliced fine sea salt, divided freshly ground black pepper, divided optional: crumbled goat cheese Prepare a grill for medium heat cooking. Consult packaging on how to grill your dough or prepared pizza crust. Essentially you will want one browned side, transfer pizza dough to a baking sheet (browned side up). Cover with pesto, tomato slices (do not cover the entire surface or the crust will get soggy). Sprinkle with salt and pepper and goat cheese if you add it. Slide pizza back onto the grill, close the cover and cook. Rotate the pizza every now and then until the bottom is browned, 3 minutes-ish.
