Awards include ‘Meat Traders Journal’, Most Innovative Business’ and Best Farm-shop in GB’ and FARMA ‘Best on-Farm retail UK 2010/2011.’ The successful candidate will be working in the butchers within Farmer Copley’s Farm Shop which is a dynamic and evolving buisness setting the standards for the industry knowledge and production of local produce. This role is suitable for someone who has no previous experience of butchery, however the successful candidate will have a strong interest in the field and be eager and willing to learn and develop. Upon starting this role you will be introduced to the basics initially which will involve: - Meat handling - Bacon, sausage and burger production You will work alongside the butchers on site to observe their techniques and learn through observation and assisting. Your training will involve looking at all aspects of the poultry, meats and game such as the cuts, added value techniques, recipes, stock rotation, hygiene etc. Once the employer feels you have been equipped with the knowledge to offer advice to the farm-shop customers, you will be involved with serving which in turn will involve working closely with the onsite café and farm-shop. The emphasis and involvement around local produce means that you will have a sound knowledge of all meat production and retail.
