Is it too early to talk Mexican food??? :) In my book its never too early so I was super pumped to find this recipe - the recipe itself isnt that special but the fact that I can prep these this weekend and have a simple yummy supper ready to go for the fam plus a burrito for mine and Kents lunch a couple times times next week made it a keeper!! Yes, I said BURRITO!! I will sub in whole wheat tortillas and skip the cheese (when I have avocado I dont need cheese) but the rest of it is superb!!
