It FINALLY cooled off enough to work in the kitchen...built my chilli base- decided Vietnamese hot peppers in tiny quantity was sufficient, no need for my equally beloved Jamaican hot pepper dry mix...beef, chopped bite size, seared in hot olive oil, then added well sweated onions, garlic, red and cubanelle pepper and celery chopped fine, hrated w/ beef until sizzling- lower cooking temp, then lots of tomato pulped from fresh, and some VERY tiny bit more of Vietnamese hot goodness, paprika, oregano, kosher salt, get it all well melded warm through,,,a half cup of warm beer....stir even more well, let sit until 2pm tomorrow in the fridge...then add a bit more tomato, 1/2 can of light red beans, stir really well, let cook on very low...serve with cheddar and sour cream
