It has been a busy week for me, sweet corn is in full swing. So far I have put up 3 bushels, blanch/cut off cob/freeze, and got 25 qts not counting what we have eaten. Bell peppers are the size of a softball, cantaloupe sweet and yummy. Green beans & new potatoes, cooked cabbage, zucchini, some tomatoes are out but not really ripe or flavorful yet. We are surrounded by farmers markets with local produce and we are enjoying every bite. We have house guests and employees in for the week so I have done lots of cooking this past week. Today we are grilling pork steaks, baked potatoes , zucchini , corn on the cob, and peach cobbler with last yrs peaches and fresh salad. I am going to pit some cherries and freeze this week and hoping peaches will be ready in a couple weeks. Our friends call us the food hoarders because we have 3 freezers of food and pantries food of canned goods. We have lots of house guests and I work full time and no time to shop so we stock up. You can take the girl out of the country but you cant take the country out of the girl! Probably will put up one more bushel of corn today...just sayin....
