It has been a really long time since my last post work, life and season I think got in the way. But I am back and I have alot of restaurant reviews and some pretty awesome recipes that I want to share. The other night I made an amazing dish Arroz con coco / coconut rice this stuff is dangerously good and goes quite nicely with fish, stirfry or chicken. What you will need 1 can of Coconut Milk (organic kind with no junk/chemicals) 2 cups of White rice 3 cups of water 2 tablespoons of brown sugar 1/2 cup of raisins (optional) Salt to taste Method: Place coconut milk in heavy bottomed non stick pot Bring to a boil and quickly reduce to low heat simmer stirring frequently. After awhile (20-40 minutes) the coconut milk will first reduce, thicken (yum) and eventually seperate into coconut and oil. Once it has seperated continue to cook browning the coconut to a golden brown then add the uncooked rice and fry in the coconut and oil until translucent or even slighty brown (2 or so minutes) then add water and stir in sugar, salt and raisins. Cover with lid, bring all back to a boil then turn down heat to simmer for 20 minutes (just as you would prepare regular rice). Once the time is up check product if all is well turn off heat and keep on burner with lid for five minutes then move off burner while lid still on for another five minutes then serve. There may be some caramalized parts at the bottom of the pot this is the absolute best part of the dish do not share this part save for the chef only. Enjoy
