It might seem like hard work to get the recommended serves of veggies in each day... But they are so versatile, you can do almost anything with them! Eat them raw, grate them, slice them, steam, bake, roast, grill.... Try adding extras into some of your favourite dishes! - grate pumpkin, sweet potato and carrot into spaghetti sauce - half the amount of mince you use in a Shepherd pie and replace with beans/legumes - layer strips of eggplant in a lasagne - whip up a simple stir fry with lots of veggies and seasoned with herbs and spices - add extra salad to your lunch - snack on veggie sticks and low fat dip - make veggie kebabs for the BBQ Buying fresh, in season is great. But frozen or canned varieties work just as well! Especially if your favourite veg is out of season. Just check the salt content of canned varieties. It just takes a little imagination!
