Its 11pm, Im at my moms and that wonderful lady made me home made bacon on toast topped with a jiggly fried egg. Bacon and eggs? This is something I truly rarely eat. Its my childhood comfort food. This was the sort of thing I ate every morning for breakfast if I had my way. And now, my kids and I hardly ever eat this. Kiddo no two is allergic to eggs, and well, commercial bacon is not the safest thing to have. Just like LW Cheah, my mom would experiment and experiment until she gets it down pat, and then, no more haha. Once we ate roti canai for weeks until she perfected the crispy dough, and then she stopped making it. I better eat a bit more bacon before mom stops making it, and then, Ill get back to my green juices. Recipe is so simple. Thinly sliced pork, salted to death with a little sprinkle of sugar.
