Its Manlihood training this weekend for my son James. Yesterday we were at Pulau Ubin roughing it out with his NCC mates. Today we are baking a Japanese Soufflé Cheesecake. This morning I visited Chef Yamashita at his bakery in Tanjong Pagar to get some tips. The cheesecake starts with baking a sponge base. Todays sponge turned out very nice! Thanks to Chef Yamashita for his valuable tips! I managed to clarify that the glucose he uses is the syrup form available at Phoon Huat and Meidiya. For pastry flour use Hong Kong Flour. Cake tin must be the aluminum type and oven must not be fanforced. I used an oven thermometer to ensure the temp is at 180 degrees c. Later I will make the cheesecake!
