Sweet Cherry Upside-Down Cake As cherry season is winding down, savor them one more time in a warm-from-the-oven cake. The plump gems line the bottom of the cake pan. Then, when the soft butter cake is inverted, the cherries become the impressive, fruity topping. Served with a pompadour of vanilla-kissed whipped cream, this dessert is to-die-for. Sweet Cherry Upside-Down Cake Brown sugar, butter and cinnamon melt into sweet cherries baked under a fine-crumbed, tender sour cream butter cake. You can use dark red cherries, golden Rainier or Royal Anns, or a mixture. This is especially delicious when warm. CHERRIES 1/4 cup unsalted butter 1/2 cup packed light brown sugar 1/2 teaspoon ground cinnamon 3 cups pitted sweet cherries (about 1 1/4 lb.) CAKE 1 2/3 cups bleached all-purpose flour 1/2 teaspoon ground nutmeg 1/4 teaspoon baking soda 1/4 teaspoon salt 1/2 cup unsalted butter, softened 1/2 teaspoon almond extract 1 cup sugar 2 eggs 1/2 cup sour cream WHIPPED CREAM 1 cup heavy whipping cream 2 tablespoons powdered sugar 1/2 teaspoon vanilla extract
