Its been a while since I shared a photo :) todays loaves, done from an overnight sponge (1 cup starter, 3 cups water, 3 cups flour) then in the morning we added 1 tablespoon of salt and (I think) 4 cups of flour. Kneaded it for about 20 minutes, then left to rise in the pans they were cooked in (no knocking back, just went into the oven about 3 hours after kneading) turned out amazingly. So soft and fluffy. Then on the back, its so hot that our starter doubled in size already today, so took advantage and made (what the recipe calls) sour dough scones. Id liken them more to a rock cake than a scone. Very yum though. Ill share the recipe in the comments.
