Its hard to qualify why the Star Trek universe holds such appeal for people across so many generations. But you cant argue that Gene Roddenberrys creation is not one of the most thoughtful and inclusive universes in the history of television. Diversity, female empowerment, political awareness, scientific and moral obligation are themes that have prevailed in every iteration. Many of us arent familiar with this 1-minute scene, but veganism was introduced early in TNG as part of the dietary requirements of a Starfleet officer. Also, several key characters (including Spock) were identified as vegetarian in TOS.
