Its lunch time here ... I am eating a hot, energetic and popular moroccan dish today, usualy prepared at winter cold weather : split peas (in arabic : Bisarah). It is one of the easiest soups in the world .. Here is the reciepe for you : 400 g split peas, soaked overnight 6 cloves garlic, thinly sliced 1 large mild onion, sliced 2 tsp ground cumin 2 tsp sweet paprika 2 tsp rose infused salt Approx. 2 litres water 2–3 tbsp olive oil Salt and pepper Sauté the garlic and onion in olive oil until translucent and aromatic, but not coloured Add the peas, spices and salt Cover in water to just over an inch above the peas Bring to a boil then simmer until the peas are tender (about 1 hour), adding more water if it begins to look dry Puree with a hand-blender and return to the pan Add more water if needed, check for seasoning Serve with small bowls of freshly ground cumin, and harissa (or three parts paprika to one part cayenne) to sprinkle on top of the soup, wedges of fresh lemon, a swirl of olive oil, and plenty of fresh bread.
