Its saturday night in Action City, and If I wasnt already hot from grilling outside today for clients, I decided to heat up my own grill at home and knock out something AMAZING for you guys... a Port Salut Stuffed Turkey Burger! What is Port Salut? Its a soft cheese...almost like a mild softer gouda in flavor. Any soft of crumbled cheese will work...feta, blue, chèvre etc. Layers of flavors.. I mean more than I could count. Juicy, cheesy, flavorful,filling, and something else you Master Grill Chefs out there can try. If youre still figuring out dinner plans, try this tonight. If not, theres alway tomorrow. Enjoy!! PORT SALUT STUFFED TURKEY BURGERS WITH CRANBERRY FENNEL COMPOTE AND SMOKEY MAYO 1 pound ground turkey 1 small yellow onion chopped heaping teaspoon of fresh thyme 1 teaspoon ITK “Turkey Punch” seasoning 4- 1/2” cubed Port Salut cheese Hamburger buns ( I used pretzel buns from a local bakery) fresh Watercress for the burgers (Arugula is a good choice as well) ITK’s “Cranberry-Fennel Compote” Smokey Mayo: 1/2 cup good quality mayonnaise 1 1/2 teaspoons ITK Little Bit More seasoning 1.If you choose to use an out door grill, go ahead and start warming that baby up. If not a stove top grill pan will work just as well. 2. In a pan, heat up about a tablespoon of olive oil. Add the onions and fresh thyme, and sauté until caramelized. Set aside 3. In a small bowl mix the mayonnaise and Little Bit More seasoning together, and also set aside (in the fridge preferably) . This helps develop the flavor while you begin working on everything else. 4. In another mixing bowl, add your ground turkey along with the caramelized onions and thyme. Sprinkle in the “Turkey Punch” and begin mixing by hand until fully combined. 5. Portion off four burgers. Roll into a near perfect ball, and with your finger make an indention in the center of the ball. Place a piece of cubed Port Salut in the center and begin covering, and gently shaping into a burger, until the cheese is hidden inside.. and well...until you have a turkey burger. 6. Brush the topside of the stuffed turkey burger with a little olive oil and sprinkle of salt. (Cook’s Line if you have it ) and place oil/salt side down on the grill. My burgers were a little thick, and I used an outdoor grill. They took around 8-9 minutes on each side. Now would be a great time to break out that meat thermometer, if you’re unsure on “doneness”. As with ALL and ANY burgers when cooking, dont you dare press down on these while cooking... especially with a stuffed burger. Youll have a huge mess. Remove when cooked. 7. Toast your hamburger buns in a broiler, or on the grill. Slap on the Smokey Mayo on both sides of the bun. Add you watercress, the turkey burger next, and a good dollop of Cranberry-Fennel Compote. Top with the top half of your bun, and open wide!
