It’s nearly October now and this time of year always reminds me of fruit picking and baking. So what better than to share with you a great old recipe of my Mams to use as the Bramley apples ripen over the next few weeks. Sheila’s Bramley Apple Tart Ingredients 1 lb plain flour ½ lb margarine 2 eggs ( use one to glaze) 1 tsp lemon juice 1 tbsp caster sugar 3 tbsp ice cold water 3 large Bramley apples Method Pre-heat the oven to 180c Place the margarine and flour in the mixing bowl and rub them together until they look like breadcrumbs. In a separate bowl mix the egg, lemon juice, water and caster sugar together. Pour this into the flour and margarine mixture and bring together with a fork. Then use your hands to create two balls of pastry. Roll out the two balls of pastry into circles the to fit a large tart dish. Line your dish with one of these rounds of pastry. Peel and slice the Bramley apples and cover this pastry base with the slices. Sprinkle with sugar and ground cloves (optional). Place the remaining round of pastry on top and press down the edges with the back of a fork. Trim off any excess pastry. Pierce the top of the pastry with a fork a couple of times to allow air to escape during baking. Brush the tart with some beaten egg for that great sticky crust.
