Iv seen this before in tomatoes. What confuses me, is that tomato seeds need to ferment to be viable. Now, the ripening process produces ethylene gas. Hence the reason ethylene gas is used to artificially ripen fruits, tomato is a fruit. Could it be possible that the ethylene gas has tricked the seeds into thinking they have fermented thus causing them to sprout prematurely. Upon further research my hypothesis was somewhat correct. It actually has to do with a hormone that is reduced when a fruit is over ripened. Although, this can happen with organically grown tomatoes, It seems to be a common occurrence with commercially produced tomatoes that have gone through the artificial ripening process. treehugger/lawn-garden/tomato-seeds-amazingly-sprouting-inside-tomato-photos.html
