Ive been asked a few times so here goes: Im not a big fan of many heritage breed turkeys. Many are dry and gamey (and expensive!)--even after brining. I know as a chef and restaurateur in this age of fetishizing every minor detail of our food, Im supposed to tell you I know the flannel-clad farmer who raises and hand-feeds my turkey and sends me postcard pictures of its development like an adopted child in some far-distant impoverished village, but the truth is Im a plain ol butterball man--and for one day a year, Ill turn a blind eye to all the horrible things they prob do to those birds to make em plump, juicy, tender and delicious. Whatever turkey you choose, DONT FORGET to BRINE your bird overnight and let it rest, covered, after it cooks.
