Ive been cooking like crazy for the past week or so. I learned how to use a handful of ingredients that were new to me as a cook and will now be in my arsenal from now on thanks to a Thai cook book I found in my kitchen. Of these my favorite ingredient is galangal, Im pretty sure it cured the cold I was coming down with yesterday. I made red curry paste from scratch, and 3 different Thai dishes since last friday. My favorite was Som Tum, a papaya salad. Today I made gram flour flat bread with cumin and fennel seeds, like chapati, which came pretty easily to me as a biscuit maker of 20 years or so (thanks Grandma Geraldine). Tonight for Allies dinner to go with the bread Im gonna make roasted and crushed beets sauteed with shallots in a lime vinaigrette topped with strained yoghurt (like labnah) fresh mint and tarragon. I got the basis for the beet recipe from a random food magazine in the waiting room at the hospital a few weeks ago when Allie was undergoing surgery. Later this week Im gonna get into making my own soba buckwheat noodles and make a huge pot of miso soup but I gotta go buy a giant bag of dried shiitake mushrooms first, to make the Dashi. Also just remembered that my hound dog Fe ate all the bonito flakes a while back, like the whole bag, and I need some more of those too. Im takin this stay at home dad thing seriously. Geri is getting lots of good food and lots of good music.
