Ive been ill for the past week before traveling over the weekend. But before catching up with all the work that has accumulated itself, I took one last chance to relax & made my first Butternut Squash-Onion-Carrot spread! Easy peasy recipe: Fry 1 chopped onion in olive oil (medium heat). Once slightly brown, add chopped butternut squash & 1 sliced carrot, fry until soft, add 1-2 tbsp of dark muscovado sugar (or brown sugar, but I prefer muscovado), cinnamon (as you like), pinch of salt & pepper, continue to fry at medium heat (lid covered), stir every 4-5 mins until creamy. Tada! :)
