Ive got one or two pieces of enameled cast iron so heres some hints: NEVER EVER let a metal utensil near and NEVER EVER bang food off the spoon on the rim, even with a wooden spoon! (Best utensils are wood and bamboo. There are special and inexpensive wire whisks coated with silicone for use in enamel). Low to medium heat for sauté or frying. If you notice a hot spot and your is burning, drop a teaspoon of water on it and deglaze that spot. Polish after washing wit a nylon pad with bicarbonate of soda on a barely damp rag.
