Ive had a few people asking what types of meals Im eating on a gluten-free, soy-free, low oil, vegan (whole foods, plant based diet)....and honestly Ill admit Im still learning the ropes and figuring out my way around the kitchen again. But Im slowly becoming more confident and making more meals were truly enjoying. Right now Im making a lot of recipes from the Happy Herbivore cookbooks. They are simple, easy, and fast whole food/plant based recipes that I can easily make gluten and soy free and Lindsay is simply a genius with easy transitional foods to this way of eating. Ive lost about 15 pounds since September and while Im currently plateaued with my weight loss my blood pressure has dropped tremendously (enough that Ill be able to drop one of my medications soon!) and (unlike I normally do) I didnt gain back any of the weight I lost over the past 4 months during the holidays. I feel so good about this way of eating. I feel like its good for the planet and more importantly my health. I think one thing that has been different on this journey so far is that I am happier having a very (VERY) slow but steady weight loss (and YET major health gains) than seeing quick results. I want this to be be a joyful lifelong change and I love that Im not hurting the animals Ive always loved in the process. And daggone its so easy to wash the dishes now that we use so few added oils! Lol I am totally not kidding! It used to take hours to wash greasy dishes and lots of detergent, especially since I dont have a dish washer! Now a little hot water and a few drops of soap will quickly wash an entire sink load of dishes (including pots and pans!)....at any rate...after that long-winded update here are a few of the dishes Ive made in the past few weeks! A really good red bean chili, skinny pad thai, gf vegan savory cornbread, chewy gf chocolate chip cookies, strawberry banana ice-cream, LOTS of greens and salads (not pictured), and gf vegan banana nut mugfins! Just a few of the yummy things weve had!
