JUST THE FACTS MAAM One of my favorite grains to bake with is TEFF. I find it to be rich in flavor and nutrients. Here are some facts about Teff I thought you might like to know: 1. The scientific name for Teff is Eragrostis tef. Its also known as Lovegrass (sounds like my kind of grain!). 2. It comes from Ethiopia and Eritrea. It is now grown in the U.S, India, Canada, and Australia. 3. Teff is similar to Millet and Quinoa. Teff is the same size as a poppy seed. There are different colors of Teff - white, red and dark brown. Teff has a light sweet flavor. The white is more mild and the dark color has a more earthy flavor. 4. Teff is rich in Vit C, calcium, phosphorus, magnesium, aluminum, iron, copper, zinc, and thiamin. Teff is also high in protein. 5. Teff is high in resistant starch, a type of fiber that is good for blood-sugar management and weight control. 6. Teff can be used by people with celiac disease. The gluten in Teff doesnt contain the a-gliadon-fraction that causes a reaction in celiacs. 7. In Ethiopia Teff is used to make Injera - a flat crepe like bread.
