Jamaican Jerk (Chicken) Juxtaposed! While the husband plans to stay busy indoors this weekend working on some IKEA projects, I am taking the chance to spend more time in the kitchen this weekend! Woke up to a foggy misty November morning. With the weather sending a chill breeze to caress my face as I stood in the patio with my morning cup of tea I decided to change my lunch menu plan to try something different and spicy with ingredients that was already available from my visit to the grocery store Friday evening. So I prepared a home-made Jamaican Jerk Spice Rub using the following recipe and enjoyed it leisurely to cherish the seemingly quiet and slow weekend within the comforts of my cozy nest! Jamaican Jerk Rub: 1/3 cup paprika 2 tablespoons ground allspice 4 teaspoons sugar 1 tablespoon dried thyme 1 tablespoon salt 2 teaspoons freshly ground black pepper 1 teaspoon ground nutmeg 1 teaspoon ground cinnamon 1 teaspoon cayenne pepper Preparation Combine all ingredients in a bowl; mix well. Marinate the chicken (I used drumsticks) with the spice rub and 2 tbsp of oil of your choice. Let it sit for 2-3 hours. I baked them covered for 35 minutes in 350F. And then baked them for another 10 minutes uncovered. And then broiled on High for 5 minutes. Enjoyed it with mixed vegetable rice, fresh mango salsa and a side of plantain fry (the Jamaican way)!
