January Cooking Class: Braised Lamb, Saturday, January 25 Though we’re not experiencing the arctic temperatures of the East Coast, there’s enough of a chill to make us crave the warm, comforting dishes of winter! In order to fulfill this urge, we’ve put together a class full of warm, winter enjoyment. We’ll begin with our New England Clam Chowder. Made from scratch, this recipe will provide skills from shellfish cookery to making and using a classic roux. Once our ‘chowdah’ is simmering away, we’ll braise beautiful Lamb Shanks from dixon. Affordable and delicious, this is something sure to be repeated at home. To complement the lamb, we’ll make a creamy, slow cooked Polenta, along with Roasted Fennel. Once we’ve completed our savory recipes, we’ll redirect our attention to the pastry department, where Miss Amanda will lighten things up with a Lime Meringue Tart...after all, ‘tis the season for citrus. After our recipe demonstrations, we’ll escort you to our dining room for a little wine tasting, while we prepare to serve the day’s recipes. $100 per guest includes recipes, instruction, wine, and lunch with our chefs.
